IC Global Consulting was founded to address a gap in the hospitality and food & beverage consulting market: the need for advisors who understand not just strategy, but execution in complex, real-world operating environments.

Founder & Principal Advisor

Isai Coca is a senior hospitality and business executive with over 25 years of global experience across food & beverage operations, culinary leadership, food safety, and enterprise program development.

He holds an MBA in Human Resource Management and formal training in Culinary Arts and Foodservice Management. His career includes leading fleetwide food allergen and special dietary programs for a global cruise line, designing training frameworks for multi-unit hospitality brands, and advising executive teams on operational risk and performance improvement.

Isai's work bridges hands-on culinary operations and executive-level strategy, allowing him to design solutions that are practical, scalable, and sustainable in real operating environments.
